But now, a seemingly endless bounty of indulgent cuisine is on offer up and down the city’s famed boulevard in these gourmet Las Vegas venues, catering to everyone from the most discerning of aficionados to the more casual armchair foodie…

When it comes to decadence and dining, there are few things more symbolic than caviar and at Michael Mina‘s eponymous seafood restaurant within the Bellagio hotel, the renowned caviar parfait comes with equal helpings of flair and personalised service. A wooden tableside cart with sleek marble topper provides an understated backdrop for the savoury luxury ahead, and you’ll select your desired caviar and garnishes before they’re artfully combined on a mother-of-pearl dish. Your choice of vodka or champagne is served alongside.

Just steps away, however, you can relish your caviar in an entirely unexpected way during weekend dinner service at The Buffet at Bellagio. Indulge in unlimited servings of some of the world’s finest caviars – traditional, Ikura, and Tobiko, specifically – as well as all the other international gourmet dishes you’d expect from this buffet. The Gourmet Dinner service is available Friday and Saturday from 3.30pm to 10pm and costs $38.99 (£25.50).

The evolution of high-end dining in Las Vegas presents some fantastic opportunities to learn from its many master chefs, in settings so exclusive you might end up on first name terms. At Monte Carlo, small groups – limited to no more than five – are taught the art and history of mixology by its beverage director, Michael MacDonnell. Seek out the Hine Talent vintage stored in hand-etched Baccarat crystal, or splurge on the Perfection by Hardy; the world’s oldest unblended cognac which derives from 100 per cent French Colombard grapes and has been aged 140 years.

At the Venetian, satisfy a sweet tooth like never before with the $750 (£490) Decadence D’Or inside Sweet Surrender; a cupcake that’s so much more we feel guilty even labelling it as one. This utterly over-the-top dessert is what happens when you combine exclusive single estate chocolate made from the rare Porcelana Criollo cocoa bean from Venezuela, with hand-harvested Tahitian Gold Vanilla Caviar, Louis XIII de Remy Martin Cognac and edible gold flakes. It almost sounds too indulgent to eat. Almost.
